Bountiful Baskets: February 16

Bountiful Baskets time again!  I was exhausted this morning, and simply did not want to go.


So, between my two baskets, I got:
  • 3 bunches of leeks
  • 2 packages grape tomatoes
  • 3 big bunches of broccoli
  • 2 bunches spinach
  • 2 5-lb bags of Gold Petite potatoes
  • 6 beautiful green peppers
  • 2 heads iceberg lettuce
  • 2 pineapples
  • 10 Pink Lady apples (I love these!)
  • 12 mercots (the tangerine looking things)
  • 20 bananas
What are my plans?

Well, I think I am going to can pineapple.  The other fruit will just be eaten.  Or turned into banana bread (that's a lot of bananas, and I'm not sure we'll get through all of them fast enough!)

I'm thinking a meal or two of stir-fry (broccoli, peppers, leeks).  I'm planning for some potato-leek soup.  Spinach, potatoes, some of the leeks, and maybe some peppers will go into some skillet breakfasts.  Lettuce and grape tomatoes will just be used, as will the rest of the potatoes.


In addition, I also contributed for a Tropical Pack.  Have never done that before:

Doesn't that look fabulous?  I'm making vanilla extract, and haven't quite figured out what to do with everything else yet.  Well, the pineapple is going to be part of the canning.  The kiwi will probably be eaten.  Mangoes are likely to be part of some smoothies (or frozen for that purpose).  Coconut?  No clue.  I've never had a fresh one.  Mint?  Also something I've never had fresh.  Lemons and limes, in small quantities, we just use up without me needing to plan really.  Same for the ginger.

So I'd love suggestions for the coconut and the mint, and maybe for the leeks too...  Do you post about what you do with your Bountiful Baskets shares?  I'd love to read about others.

If you lived in KY, you'd make mint syrup with that mint for Mint Juleps, but it's also yummy in iced tea.

Mint jelly is yummy, too.

Mint Julep is something I've never ever had...

But hmmm. Mint syrup, mint jelly... I might just look into one or the other...

I've always either canned my mint into mint jelly or made flavored water or tea with it. I love leek soup and would probably just make a ton of soup if it were my leek. I have no idea on the coconut.
