Bountiful Baskets: March 9

Bountiful Baskets time again!  This week, in spite of blizzard warnings, the truck was actually early.  So, naturally, I wasn't.  <sigh>

Anyway, I contributed for a couple of baskets, and split boxes of lemons and oranges with a friend.

Included in our TWO baskets:
  • 4 heads green leaf lettuce
  • 2 bunches bok choy
  • 2 bunches asparagus
  • 6 green bell peppers
  • 3 bunches of radishes
  • 3 heads of garlic
  • 12 lemons
  • 12 bananas
  • 6 mangoes
  • 2 boxes of strawberries

I don't have anything terribly specific planned.  Bananas and strawberries will be eaten.  Mangoes will be turned into smoothies, probably.  Lettuce, peppers, garlic are all staple veggies that we just use. Asparagus -- well, last week we roasted it like Cristi suggested in the comments in my Bountiful Baskets post, and that was fabulous.  We'll continue doing that.  Lemons -- I'm planning to do a bunch of juicing and freezing the juice.

The two mystery items for me this week are radishes (I've never figured out how to get radishes into my family, including me) and bok choy.  I've used bok choy before, but don't have any killer ideas as to how to prepare it.  I'm thinking we might try this Chinese stir-fry recipe -- but that doesn't use up much of what we have!

I haven't gotten a basket it a couple of weeks, but this is a better week for me. I'm really hoping that we'll get some asparagus in our basket.
